OMAKASE CHEF DE PARTIE

Key Duties and Responsibilities

Will participate actively and ensure that the team is on time and in position for service.
Ensure the proper execution of all recipes.
Ensure proper and timely execution of all food accurate plating, hot food hot and cold food cold. All food served in the allotted time frame. Expedite service when necessary.
Conducts Line Checks and oversees the line check process for all shifts to ensure quality levels.
In charge of the organization and cleanliness of all food and other kitchen storage areas.
Ensures that all FSMS and company policies and procedures for receiving, storage and rotation are being followed.
Follow all Market guidelines for daily operating procedures line check, Station schematics, Protein Tracking Sheet
Contribute to the successful achievement of budget targets for payroll, food and other controllable expenses.
Lead by example, mentor and develop all culinary staff.
Perform as a professional Omakase Chef in front of the customer.
Can communicate with the customer and explain our dishes in English.
Always be creative, innovative and keep with culinary trends and propose new menus and dishes for the to the chefs.

Skills, Experience Educational Requirements

Food Quality Knowledge.
Must be able to cook on every Station.
At least 5 Years of experience in ultraluxury establishment
Japanese knife handling skills and butchering skills.
Basic knowledge of Japanese cuisine
The ability of Making Nigiri
Communication Skills in English with our customer at the counter

Suitable candidate will be reporting directly to the Restaurant Chef.
